So, I started pastry school on Monday, but everything was behind schedule so I ended up making this.

This is how it all works. Each course is a month long (6 courses) and this Monday was supposed to be the start of a whole different course. But since the students didn’t finish their “wedding cakes” from last week, we had to roll over the course I came in to do..

Anyway, my first day of school was fine. I’m pretty close to all my classmates now because they’re all weird like me.

This is how it went down.

• Monday - Went on time at 6:50, School starts at 7:00 but the students decide to come at 7:45. So I’m never going on time anymore. Well I met everyone, got familiar with the bakery and students. We also learned how to make white chocolate fondant.
• Tuesday - Since everyone was working on their wedding cakes, they were kind enough to bake me one so I could do what they’re doing. We covered the cake in white chocolate fondant (bottom green layer) and we also made a white chocolate cheesecake! But, I haven’t gotten to take it home yet.. Oh yeah, the cheese cake was the semi start of the course I came in to do. “Hot and Cold Plated Deserts”
• Wednesday - I made this sucker right here. Took me about 3 hours, because I wasn’t sure what I wanted, that’s why it’s so plain.. I made the top tier at home because I’m an over achiever. Jk. But I did make it at home because I wanted to be cool like everyone else. I just baked a chocolate cake, (burned myself twice) carved it topsy turvy, buttercream frosted it, then covered it in blue marshmallow fondant I made at home.

So, the top tier is chocolate with buttercream frosting/marshmallow fondant. And the bottom tier is a yellow cake brushed with simple syrup and filled with raspberry filling, buttercream frosting, covered in white chocolate fondant.

Tomorrow, Thursday’s, are my busiest days. But I really don’t wanna get into that right now and kill my mood. I love this school! I’m never bored! :)
